- 1 Small Onion, grated
- 2 Eggs
- 100 g Flour
- Salt & Pepper, to taste
- Oil for Frying
Instructions
- Grate the vegetables using a box grater or food processor and place in a sieve or cheesecloth to extract moisture.
- Combine the drained zucchini and onion with eggs, flour, salt, and pepper in a mixing bowl.
- Heat oil in a non-stick skillet over medium heat.
- Cook small portions of the mixture in the oil for 3–4 minutes per side until golden brown and crispy.
- Drain on paper towels and serve warm.
Notes
Ensure to squeeze out excess moisture from the zucchini for the perfect crunch. Serve with tzatziki sauce or yogurt for dipping.
