Description

Delicious and crispy zucchini fritters that capture the essence of summer. Perfect for any occasion as a light lunch or appetizer.


Ingredients

Scale
  • 2 Zucchini, grated
  • 1 Small Onion, grated
  • 2 Eggs
  • 100 g Flour
  • Salt & Pepper, to taste
  • Oil for Frying

Instructions

  1. Grate the vegetables using a box grater or food processor and place in a sieve or cheesecloth to extract moisture.
  2. Combine the drained zucchini and onion with eggs, flour, salt, and pepper in a mixing bowl.
  3. Heat oil in a non-stick skillet over medium heat.
  4. Cook small portions of the mixture in the oil for 3–4 minutes per side until golden brown and crispy.
  5. Drain on paper towels and serve warm.

Notes

Ensure to squeeze out excess moisture from the zucchini for the perfect crunch. Serve with tzatziki sauce or yogurt for dipping.
