Description

Delightful zucchini bagels that are golden-brown and packed with savory goodness, perfect for brunch or snacks.


Ingredients

  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup cheese (mozzarella or sharp cheddar)
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit) and line a baking sheet with parchment paper.
  2. Prep the zucchini by placing the grated zucchini into a kitchen towel and twisting tight, squeezing out as much moisture as possible.
  3. Mix the ingredients in a large mixing bowl: combine the drained zucchini, almond flour, cheese, eggs, baking powder, garlic powder, onion powder, salt, and pepper. Stir until homogeneous.
  4. Shape your bagels using a spoon or your hands into rounds about 2 inches in diameter on the prepared baking sheet.
