Description

A hearty breakfast bagel featuring crispy bacon, spicy jalapeños, and rich cheddar, perfect for starting your day with a flavor-packed meal.


Ingredients

  • 1 medium tomato, diced
  • 1 small jalapeño pepper, seeded and diced
  • 1 tablespoon lime juice
  • Salt and pepper (to taste)
  • 8 slices thick-cut bacon, divided
  • 1 pound ground pork sausage
  • 4 slices sharp cheddar cheese, divided
  • 4 large eggs, fried, divided
  • 1 tablespoon unsalted butter
  • 4 onion bagels, toasted
  • ½ cup (113 g) cowboy butter, softened, divided

Instructions

  1. Prepare the pico de gallo: In a small bowl, combine the diced tomato, jalapeño, lime juice, salt, and pepper. Stir gently and set it aside for about 10 minutes.
  2. Cook the bacon and sausage: Heat a large skillet over medium heat. Add the bacon, cooking until golden crispy. Remove and drain on paper towels. In the same skillet, add the ground pork sausage and sauté until fully cooked.
  3. Toast the bagels: Slice onion bagels in half and toast until golden brown. Spread a generous layer of cowboy butter on each half.
  4. Assemble the bagels: On the bottom half of each bagel, layer two slices of bacon, followed by sausage, cheddar cheese, a fried egg, and a spoonful of pico de gallo. Cap with the top half of the bagel and gently press down.

Notes

Make the pico de gallo and cook the sausage the night before to save time. Customize with different meats and cheeses for variety.
