- 1 cup granulated sugar
- 4 large eggs
- 2 tsp baking powder
- 1 cup whole milk
- 1/2 cup water
- 1 cup sugar (for syrup)
- 1/4 cup lemon juice
- A pinch of salt
- Butter or oil (for greasing pans)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the cake pans by greasing them lightly with butter or oil.
- Mix dry ingredients: In a large bowl, whisk together flour, baking powder, and salt.
- Whip eggs and sugar: In a separate bowl, beat eggs and sugar until fluffy and light.
- Combine wet and dry ingredients by gradually adding the dry mixture to the wet while alternating with milk.
- Pour the batter evenly into the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool the cakes in pans for 10 minutes then transfer to a wire rack.
- Prepare the syrup: In a saucepan, combine water, sugar, and lemon juice, simmering until sugar dissolves.
- Soak the cakes with syrup after they have cooled.
- Frost and assemble with your preferred frosting.
Notes
For maximum flavor, prepare the cake a day in advance. The syrup can be stored in the fridge for up to a week.
