Description

A vibrant celebration of summer flavors, this Street Corn Pasta Salad combines sweet roasted corn, creamy dressing, and fresh vegetables for a refreshing dish.


Ingredients

  • 400g Pasta (short pasta like fusilli or rotini)
  • 2 Roasted Corn Cobs
  • 3 Green Onions
  • 1 Shallot
  • 2 Jalapeños
  • 1/2 Cup Cilantro
  • 1 Cup Cotija Cheese
  • 1 Cup Sour Cream
  • 1/2 Cup Mayo
  • 3 Cloves Garlic
  • Juice and Zest of 1 Lime
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  1. Begin by cooking the pasta according to package instructions. Once al dente, drain and let it cool completely.
  2. Meanwhile, carefully remove the kernels from the roasted corn cobs into a bowl.
  3. In a large bowl, combine the cooled pasta with the roasted corn, finely chopped green onions, diced shallot, sliced jalapeños, and freshly chopped cilantro.
  4. In a separate mixing bowl, whisk together the cotija cheese, sour cream, mayo, minced garlic, lime juice, lime zest, smoked paprika, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta salad mix and gently toss until well-coated.
  6. For the best flavor, refrigerate for at least 30 minutes before serving.

Notes

This salad can be made in advance, allowing flavors to deepen. Reserve some dressing to add before serving leftovers.
