Description

A hassle-free and flavorful summer dish featuring zucchini, carrots, and your choice of proteins, all cooked to perfection in a crockpot.


Ingredients

Scale
  • 2 Zucchini, sliced
  • 2 Carrots, chopped
  • 1 lb Chicken Breast or Beef, cut into chunks
  • 2 tsp Paprika
  • 1 cup Broth or Wine
  • Fresh Herbs (Basil, Thyme, Oregano) to taste

Instructions

  1. Clean and chop the zucchini and carrots into even pieces.
  2. Optional sear the chicken or beef for richer flavor.
  3. Layer vegetable pieces in the bottom of the crockpot.
  4. Spice it up with herbs, paprika, and seasonings.
  5. Add broth or wine over the layers.
  6. Set to ‘low’ for 6-8 hours or ‘high’ for 3-4 hours.
  7. Serve hot, garnished with fresh herbs.

Notes

Make ahead by prepping vegetables the night before. Customize with different proteins or vegetables as desired.
