Description

This Pineapple Glazed Salmon recipe combines tender salmon fillets with a sweet and savory pineapple glaze, creating a vibrant meal that’s perfect for any occasion.


Ingredients

  • 4 salmon fillets (approximately 6 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh or canned pineapple, diced and well-drained
  • 1/4 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baking dish by lightly greasing it.
  3. Whisk together brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger in a small bowl.
  4. Pat the salmon fillets dry with paper towels.
  5. Rub each fillet with olive oil, then season with salt and black pepper.
  6. Place the salmon fillets skin-side down in the prepared baking dish.
  7. Spoon two-thirds of the pineapple glaze over each fillet and scatter the diced pineapple around.
  8. Bake for 12 to 15 minutes until the salmon flakes easily.
  9. Optional: Broil for 1 to 2 minutes for a caramelized glaze.
  10. Remove from oven and let rest for 5 minutes.
  11. Garnish with fresh parsley and serve warm.

Notes

Make the glaze a day in advance for convenience. Adjust sweetness by reducing brown sugar or substituting with honey.
