Description
Delightful no-bake cheesecake bites with a creamy filling, buttery crust, and a festive pink hue, perfect for any celebration.
Ingredients
Scale
- 8 oz Cream Cheese
- 1 cup Confectioners’ Sugar
- 1 tsp Vanilla Extract
- 1 drop Pink Food Coloring
- 1.5 cups Graham Cracker Crumbs
- 0.5 cup Unsalted Butter
Instructions
- Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter until well blended. The mixture should resemble wet sand.
- Chill the Crust: Press the crumb mixture firmly into a lined baking dish, making an even layer. Allow it to chill in the fridge for 10-15 minutes, helping it set.
- Mix the Filling: While the crust chills, beat together the cream cheese, confectioners’ sugar, and vanilla extract until smooth and fluffy.
- Add Color: Incorporate the drop of pink food coloring, mixing just until evenly distributed.
- Shape the Bites: Remove the crust from the fridge and scoop out tablespoon-sized portions of the cream cheese mixture. Roll them into balls and place them on the crust.
- Final Chill: Return the bites to the refrigerator for at least an hour.
Notes
For a lighter version, consider using low-fat cream cheese. Adjust sweetness to your preference by adding less confectioners’ sugar.
