Description

A vibrant and flavorful Mexican street corn recipe featuring grilled corn on the cob slathered in a creamy dressing, topped with cotija cheese and chili powder.


Ingredients

  • 4 ears of sweet corn
  • 1 lime
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese

Instructions

  1. Preheat the grill to medium-high heat, around 400°F (200°C).
  2. Prepare the corn by husking and cleaning the ears.
  3. Grill the corn for 8-10 minutes, turning occasionally until tender and charred.
  4. Mix the mayonnaise, sour cream, and garlic powder in a bowl.
  5. Ready the cotija by crumbling it onto a plate.
  6. Cut the lime into wedges for garnishing.
  7. Coat the grilled corn with the creamy mixture.
  8. Roll each ear of corn in the cotija cheese.
  9. Finish by sprinkling chili powder over each ear.
  10. Serve with lime wedges and enjoy!

Notes

For extra flavor, add fresh herbs, hot sauce, or sriracha on top. You can also bake or air fry the corn if grilling isn’t an option.
