Description

Delightful Lemon Poppy Seed Bread combines bright lemon flavor with crunchy poppy seeds for a moist, tender loaf perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease your loaf pan.
  2. Combine in a large mixing bowl the flour, sugar, baking powder, baking soda, and salt.
  3. Whisk together the dry ingredients to disperse evenly.
  4. Whisk together in another bowl the melted butter, eggs, buttermilk, lemon juice, and lemon zest until creamy.
  5. Gently pour the wet mixture into the dry ingredients and fold together carefully.
  6. Fold in the poppy seeds evenly throughout the batter.
  7. Pour the batter into your prepared loaf pan and smooth the top.
  8. Bake for 50 to 60 minutes, testing for doneness with a toothpick.
  9. Allow to cool in the pan for 10 to 15 minutes before transferring to a wire rack.

Notes

For variations, consider adding blueberries or nuts for extra texture. This bread can also be made gluten-free by using a gluten-free flour blend.
