Instructions
- Preheat your oven to 350°F (175°C) and generously grease your loaf pan.
- Combine in a large mixing bowl the flour, sugar, baking powder, baking soda, and salt.
- Whisk together the dry ingredients to disperse evenly.
- Whisk together in another bowl the melted butter, eggs, buttermilk, lemon juice, and lemon zest until creamy.
- Gently pour the wet mixture into the dry ingredients and fold together carefully.
- Fold in the poppy seeds evenly throughout the batter.
- Pour the batter into your prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, testing for doneness with a toothpick.
- Allow to cool in the pan for 10 to 15 minutes before transferring to a wire rack.
Notes
For variations, consider adding blueberries or nuts for extra texture. This bread can also be made gluten-free by using a gluten-free flour blend.
