- 2 lemons (juice and zest)
- 1/4 cup unsalted butter
- 4 medium-sized potatoes (cubed)
- 2 cups broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the potatoes: Toss cubed potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy and golden, flipping halfway through.
- Melt the butter in a non-stick skillet over medium heat. Add the lemon juice and zest, stirring until combined.
- Cook the salmon fillets, seasoned with salt and pepper, in the skillet once the butter mixture bubbles, about 4-5 minutes on each side until flaky.
- Add the broccoli in the last 5 minutes of cooking to steam and absorb the sauce.
- Plate the salmon alongside crispy potatoes and broccoli, drizzled with lemon butter sauce. Garnish with parsley if desired.

Ensure the salmon is at room temperature before cooking for best results. You can prep the potatoes ahead and store them uncooked in the fridge for up to 24 hours.
