- Salt & Pepper to taste
- 8 pre-cooked breakfast sausage links
- 8 8-inch flour tortillas
- 1 cup shredded cheddar cheese
- 1 tbsp butter
- Non-stick cooking spray or additional butter
Instructions
- Whisk the eggs into a large bowl, then add the milk, salt, and pepper. Blend until frothy.
- Scramble the eggs in a non-stick skillet with melted butter over medium heat, stirring gently until fluffy, about 5-7 minutes.
- Prepare the tortillas by toasting them lightly in a skillet or microwave to make them pliable.
- Assemble each tortilla with a sausage link, scrambled eggs, and cheddar cheese.
- Roll the tortillas tightly, tucking in ends to secure the filling.
- Cook the roll-ups seam-side down in a lightly greased skillet over medium heat for about 2-3 minutes per side until golden brown.
- Serve immediately, possibly with salsa or hot sauce.

You can customize fillings and use different types of cheese or sausage. Make ahead by storing un-cooked roll-ups in the fridge.
