A delightful appetizer that combines crunchy baguette, creamy avocado, and succulent garlic shrimp for a flavor-packed bite.

- 10–12 baguette slices (about ½” thick)
- 6 tbsp olive oil, divided
- 1 tsp garlic powder
- 1 ripe avocado
- Juice of ½ lime
- ¼ tsp salt
- ¼ tsp black pepper
- 12 large shrimp, peeled and deveined
- 2 large garlic cloves, cut into slivers
- ¾ tsp smoked paprika
- ½ tsp cumin
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Slice the baguette into 10-12 pieces, each about ½ inch thick.
- Mix 3 tablespoons of olive oil with the garlic powder in a bowl.
- Brush the garlic-infused oil onto both sides of each baguette slice.
- Bake the crostini for about 10-15 minutes or until crisp and golden.
- Mash the avocado in a bowl with lime juice, salt, and pepper until creamy.
- Heat the remaining olive oil in a skillet over low heat, then add the garlic slivers and sauté for 2 minutes.
- Season and sauté the shrimp with smoked paprika, cumin, salt, and pepper for 3-5 minutes until pink.
- Spread the avocado mixture generously over each crostini.
- Top each crostini with one shrimp and serve immediately.
Notes
Make the garlic oil and avocado spread in advance for easier assembly. Serve fresh for optimal crunch.
