Description

Delicious crispy bites made from zucchini, feta cheese, and herbs, perfect for appetizers or light meals.


Ingredients

  • 2 medium zucchinis (about 400 g)
  • 150 g feta cheese (crumbled)
  • 1 egg
  • 50 g breadcrumbs
  • 2 tbsp oats (optional)
  • 2 tbsp freshly chopped parsley
  • 1 clove garlic (finely chopped)
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Prepare the zucchini: Wash the zucchinis, cut off the ends, and grate them. Squeeze out excess moisture.
  2. Mix the filling: Combine the drained zucchini, crumbled feta, egg, breadcrumbs, oats (if using), garlic, oregano, parsley, salt, and pepper in a large mixing bowl.
  3. Form the balls: Shape the mixture into small balls about the size of a golf ball.
  4. Transfer the balls onto a lined baking sheet, drizzle with olive oil, and bake at 180°C (350°F) for about 20 minutes, turning halfway through.
  5. Cool and serve: Allow to cool before serving warm.

Notes

For variations, try using different herbs or adding chopped vegetables. Ensure you squeeze out excess moisture from the zucchini to keep the balls crispy.
