A delightful Italian dish made with baked zucchinis filled with a creamy cheese and herb filling, topped with marinara sauce.
Ingredients

- 2 large zucchinis
- 1 cup cooked summer vegetables (zucchini, bell peppers, or spinach)
- 1/2 cup fresh herbs (basil or parsley)
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, shredded
- 2 cups marinara sauce
- Salt and pepper, to taste
Instructions
- Prepare the zucchini by slicing them in half lengthwise and scooping out the insides.
- Make the filling by combining cooked vegetables, fresh herbs, ricotta, mozzarella, parmesan, salt and pepper in a large mixing bowl.
- Fill each zucchini half with the cheesy filling and roll them up.
- Bake in a preheated oven at 180°C (350°F) with marinara sauce at the bottom of the dish for 25-30 minutes.
- Serve hot alongside a fresh salad or bread.
Notes
Make-ahead tips: Prepare the rollatini earlier and store in the fridge. Freeze leftovers for up to three months.
