Description

A delightful Italian dish made with baked zucchinis filled with a creamy cheese and herb filling, topped with marinara sauce.


Ingredients

Scale
  • 2 large zucchinis
  • 1 cup cooked summer vegetables (zucchini, bell peppers, or spinach)
  • 1/2 cup fresh herbs (basil or parsley)
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 2 cups marinara sauce
  • Salt and pepper, to taste

Instructions

  1. Prepare the zucchini by slicing them in half lengthwise and scooping out the insides.
  2. Make the filling by combining cooked vegetables, fresh herbs, ricotta, mozzarella, parmesan, salt and pepper in a large mixing bowl.
  3. Fill each zucchini half with the cheesy filling and roll them up.
  4. Bake in a preheated oven at 180°C (350°F) with marinara sauce at the bottom of the dish for 25-30 minutes.
  5. Serve hot alongside a fresh salad or bread.

Notes

Make-ahead tips: Prepare the rollatini earlier and store in the fridge. Freeze leftovers for up to three months.
