Description

A delightful cake featuring layers of meringue and juicy blackcurrants, combining crunchy and creamy textures.


Ingredients

Scale
  • 100 g Butter
  • 100 g Sugar
  • 1 Large Egg
  • 4 Large Egg Yolks
  • 1 Packet Vanilla Sugar
  • 150 g All-Purpose Flour
  • 2 tsp Baking Powder
  • Rum (to taste)
  • 4 Large Egg Whites
  • 1 Pinch of Salt
  • 150 g Sugar
  • 400 g Blackcurrants (or other berries)

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add the whole egg and incorporate egg yolks one at a time.
  3. Infuse the batter with rum.
  4. Incorporate the sifted flour and baking powder gently.
  5. Bake in a preheated oven at 175 °C for 30 minutes.
  6. Prepare the meringue by whipping egg whites with salt until soft peaks form.
  7. Fold in the blackcurrants into the meringue.
  8. Top the cake with meringue mixture and bake again for 30 minutes.

Notes

Make the cake base a day in advance for better flavor. Store wrapped in plastic wrap to maintain moisture.
